It is using the Gamebyro/Netbyro engine (same one that Oblivion uses)
Takes place after Fallout 2

Yeah, huge, distracting and blinding lens flare. Just like in real life! Someone needs to send death threats to the designers of all future games to make sure they hold back on those kinds of effects.

No ham. Ham isn't kosher, and we wouldn't want to alienate a portion of the market. Instead, there'll be lots of lean corned beef and pastrami, with a vegetarian toggle.

NO HAM!? I just knew Bethesda would make a mess of things the moment i heard they'd be developing it...no ham indeed, honestly!...pfftt.

But on a side note, I'm looking forward to the vegetarian toggle. (assuming it's a vegetarian plastic toggle like the ones used to secure the neck-ties in boy-scouts)

I'll add another "likely" to the list: Ron Perlman. Since he still does game VO work, I'd guess Bethsoft will get him for Fallout 3.

I would like to make a hypothesis.The elder scrolls aren't linked to each other storyline-wise.So you don't have to play the previous to know what's going on the next.This might apply to fallout...
