Right now, I've been mostly playing this:

It's basically one of those old Japanese top-down flight games but only employs the boss battle idea. In this case however, it uses a simple adaptive AI system to alter the construction and tactics of each enemy to better defeat you. It's pretty fun and gets damn hard pretty quickly, in addition to the fact that it does not end.
