In my book, the best guns were in the first Unreal Tournament. Any other games can pack their shit and leave.

Painkiller's minigun/rocket-launcher thing is the most beautiful thing I've ever seen. The splatter when you shot enemies with it was wonderfull and the sounds were very well done.
